RED WINE BAIRRADA
Some of its Baga grapes come from old vines, but in years when there is no red wine cellar and there is red reserve, all the grapes from the old vines are destined for this wine. These grapes are fermented for 5 to 8 days in an open press without stalking (the berries are not removed from the bunch). Afterwards, a reassembly is made with wooden masses, several times a day, until they reach the correct intensity. The wine then finishes fermentation in old wooden barrels. While resting, it is cleaned and aged in the same vats for about 18 months. It is bottled without any gluing or filtering. All these processes are done manually.
