THE TRADITION OF SARDINES IN THE POPULAR SAINTS

Grilled sardines are a traditional dish of Portuguese cuisine that can be eaten all year round, but take on a different flavor during the Popular Saints. During the month of June, a “sardinhada” cannot be missing in every house. The abundance of this fish on the Portuguese coast and the great fishing tradition explain the strong presence of sardines at Portuguese tables.

The best way to cook the sardines is to prepare them the day before and season them with coarse salt, place them on a double grill over the coals, without flame, over low heat, usually accompanied by roasted peppers and boiled potatoes . Specialists in the art of sardines say that they should be enjoyed on top of a thick slice of bread that absorbs its natural fat.
